Never used a meat injector before. Got a wild hair last weekend and stopped by Wallymart to get one. We had a leg of lamb left from October of '05 and thought this might work....(boy, did it ever! - it was great! Wink )


Mango Garlic Leg of Lamb

Grind up these spices in a coffee grinder used exclusively for spices:
8 whole cloves
12 peppercorns
1 tsp dried thyme
3 dried guajilla peppers

Then combine spices in a blender with these ingredients:
5 garlic cloves
The pulp of one mango
1/2 can beer
Blend until smooth. Add more beer to thin if necessary.

Inject the marinade into meat.
Coat outside liberally with Tony Chachere seasoning and rub in.

Cook in roasting pan on medium grille uncovered for 1 hour.
Turn over, cover and cook for additional 1/2 hour.

Remove from heat and let sit for 15 min before boning out meat.




Served with:

Steamed spinach and chard:
1 lbs. chopped fresh spinach
4 large leaves chopped swiss chard

Baked large orange squash
3 crushed garlic cloves
1/3 cup chopped fresh basil
Tony Chachere seasoning
Top with parmesan cheese

My brother came up with this one a number of years ago when I first bought a lamb at the FFA auction:

Lambourghini's

1 lb. Ground lamburger
1 T capers
4 - 6 anchovies to taste

Form silver dollar sized burgers from ground lamb.
It should make about 12
Lay the burgers out in pairs
Make a thumb print in 1/2 of the burgers.

Mix capers and anchovies mixing togerter by smashing with a fork.
Put a small dollop in the burgers that have the thumb print.
Place the other burgers on top and press together yielding 6 lambourghini's.

Place on hot grill 3 - 4 min per side.


Serve with:

French bread slices cut in 1/2 to fit lambourghini's

Small red potatoes steamed with rosemary

Spring mix salad with chopped walnuts and sweet vinigarette dressing.

what colon Question , where Question ...and yes you did misspell it..... Laughing

the line could have used a comma, but that is depedant upon how you are reading.....is it a baked, large orange squash
or a large baked orange squash
or just a cooked Question crookneck squash Question Question
what a decision...let the author decide
